DIY Payroll?

Does anyone know how to do payroll for a 1 person new york state s-corp? The most challenging aspect for me is knowing what to withhold and when to file.

The payroll services are too expensive because I'm starting a new business and the websites I've come across provide vague information and seem to only want to sell software.
