How do you do EFT's in Quickbooks?

In the banking register, how do you go about entering an EFT and not a CHK
(for when I use my debit card)?

When I type in EFT in the top box, it still leaves CHK in the box below and
I can't figure out how to change it or delete it.

You don't.
The 'CHK' on the bottom box is a QB transaction code. Other examples of
transaction codes are 'DEP' for deposits, 'BILLPMT' for payments initiated
in the 'Pay Bills' screen (regardless of whether or not they were physical
checks), 'PAY CHK' for paychecks to employees. There are 20 different
transaction codes that can appear in an account register. Look in the help
index under 'transactions, codes for' for the complete list.

I put the name of the place I used the card in the check # space,
example WalM for WalMart etc.

You can not change the transaction type, so your suggestion of EFT or I
write in the place where I used it instead of a check number.
