SQL 2005, although with RMS V3 coming out you will probably have to change to
SQL 2008 soon enough.

I tried SP3 on sql2000 and it worked fine. Even though the SO install comes
shipped with sql express 2005 and recommends an upgrade, who says you have to?

sql express 2005 is only 4GB

If you are using the full version of sql 2000 (not msde or express) you are
effectively only limited by your hard drive space.

SQL2000 maximum objects in a database
2,147,483,647 (or available memory)
