Witness of attorney

In the instructions about setting up a Lasting Power of Attorney the instructions are generally very specific. I have asked my son to be one of my attorneys and when instructing him about having the document witnessed I saw that there was nothing to say that his wife could not be the witness. Would her signature be acceptable?
